Shakshuka- A spicy baked egg dish that will brighten your day!

Yields: 4 – 6 servings


– 3 Tablespoons of olive oil

– 3 cloves of garlic

– 1 bell pepper of your choice, I used an orange pepper.

– 4-5 eggs, use what you have on hand

– 2 red onions

– Sprig of cilantro

– 1 (15oz or 28oz) can of diced tomatoes, with juices

– Teaspoon of salt

– Teaspoon of pepper

– 1 1/2 teaspoon of cumin

– 1 1/2 teaspoon of paprika

– 1/8  teaspoon of cayenne

– Some type of hot sauce, for serving . I am a fan of Tapatio!


– Heat oven to 375 degrees.

– Heat oil in medium skillet over medium- high heat

– Chop up onions and bell pepper

– Cook until soft, 15- 20 minutes

– Add garlic

– Stir in cumin, paprika and cayenne

–  Pour in tomatoes , season with salt and pepper

–  Simmer until tomatoes have thickened

– Crack eggs gently over the tomatoes

– Season with salt and pepper

– Place in the oven, 7-10 minutes

– Or until edges are white and yolk is shiny and beautiful

– Chop cilantro

– Sprinkle shakshuka with the cilantro

~ Shakshuka originated in North Africa , this dish has many versions, embraced and changed by many cooks worldwide!
