Chipotle roasted yellow tomatoes and onions!

This is a perfect side dish. Smoky, healthy and a blast of flavor!

Yield: 4-5 servings

– 2 or 3 medium sized yellow tomatoes (red are great also)

– 1 large onion

– Olive oil

-Salt and pepper

– 1 Tablespoon of chipotle spice

Procedure

  • Preheat oven to 375 degrees
  • Slice onions
  • Chop tomatoes into quarters and then halve the quarters
  • Place onions and tomatoes in a bowl
  • Drizzle with olive oil
  • Season with a teaspoon of salt
  • Season with pepper to your liking
  • Sprinkle with all of the chipotle spice
  • Stir mixture to make sure salt pepper and chipotle are well distributed
  • Place mixture in a cast iron pan or onto a baking sheet
  • Bake at 375 degrees for 35 minutes
  • Or until the tomatoes are tender and juicy
