This is a perfect side dish. Smoky, healthy and a blast of flavor!
Yield: 4-5 servings
– 2 or 3 medium sized yellow tomatoes (red are great also)
– 1 large onion
– Olive oil
-Salt and pepper
– 1 Tablespoon of chipotle spice
Procedure
- Preheat oven to 375 degrees
- Slice onions
- Chop tomatoes into quarters and then halve the quarters
- Place onions and tomatoes in a bowl
- Drizzle with olive oil
- Season with a teaspoon of salt
- Season with pepper to your liking
- Sprinkle with all of the chipotle spice
- Stir mixture to make sure salt pepper and chipotle are well distributed
- Place mixture in a cast iron pan or onto a baking sheet
- Bake at 375 degrees for 35 minutes
- Or until the tomatoes are tender and juicy
