Lemony salmon flatbread!

This tasty flatbread is full of flavor! From the calm flavor of the roasted salmon to the bright flavor of the grated lemon.

Yield: 6 slices

Ingredients:

  • 6-8 oz filet of salmon (trader Joes has some great options in the frozen section) (buy wild)
  • 1 package of pizza dough (trader joes,kroger,publix)
  • Handful of arugula
  • 1 lemon
  • 1 radish
  • olive oil

Procedure:

  • Pre-heat oven to 425 degrees
  • Rub down salmon with olive oil
  • Sprinkle with salt and pepper
  • Roast skin side on a foil covered pan
  • 12-15 mins
  • Set aside after it is finished
  • Next oil a separate sheet pan
  • Spread out dough until it is shaped to your liking
  • Spread olive oil on the dough
  • Bake for 15-20 mins
  • Chop salmon up on a cutting board or pull apart with your fingers
  • Spread half of the salmon across the cooked pizza dough
  • Bake for 5 mins at 350 degrees
  • Spread arugula on top of salmon
  • Add more salmon
  • Grate lemon onto the pizza with a mandolin
  • Slice the radish into match sticks and sprinkle on pizza

This recipe is easy peasy! 3 ingredients. And a happy mouth!

Girl scout cookie season is upon us!

Perfect for a valentines or galentines day treat!

Yield: 12 ice-cream sandwiches

Ingredients:

  • 1 pack of trefoil girl scout cookies (blue box)
  • 2 cartons of red-velvet halo top ice cream
  • Any type of sprinkles that you want

Procedure:

  • Place some foil or wax paper on a sheet pan
  • Layout 24 cookies on the sheet pan
  • Place the carton of ice-cream horizontally on a cutting board
  • Slice it 4 times
  • Use a cookie cutter to cutout 12 mini circles of ice cream
  • Place on top of one cookie, place the other cookie on top
  • Pour sprinkles on a plate or sheet pan
  • Hold the ice-cream sandwich between your thumb and pointer finger
  • Gently roll in sprinkles
  • Place in freezer until ready to serve
  • Enjoy these tasty ‘not so bad’ for you treats!

Spicy Cold noodle salad!

This dish is great for summer! It is  healthy, combining fresh ingredients for a quick meal. It can be made for one or doubled for a group. Enjoy this easy summer recipe!

 

Yield: 2 servings

Ingredients:

  • 1/2 cup of arugula
  • Small amount of chives
  • 2 heads of radish
  • 1/3 of a shallot (just a small amount, eyeball it. Also choose for preference of taste)
  • 1/2 of a chicken breast
  • Solid handful of dry rice noodles (Kroger,Publix) Local asian market .
  • 1 Tablespoon of soy sauce
  • 1 Tablespoon of Korean bbq sauce
  • 1 Teaspoon of sriracha
  • Pinch of salt and pepper

Procedure:

  • Place a pot with 3 cups of water the the stovetop, medium-high heat
  • Chop chives for garnish, set aside
  • Place a pan (preferably cast-iron) on the stovetop, also at medium-hight heat
  • Slice radishes into half-moon’s
  • Chop shallot into small pieces
  • Slice chicken breast into bite size pieces
  • Season chicken with salt and pepper
  • Saute until cooked through but still tender
  • Mix soy sauce, Korean bbq sauce and sriracha together in a bowl
  • Place rice noodles in the boiling water, cook 3-4 minutes, occasionally stirring
  • Drain in a colander, continue to rinse until noodles are no longer hot.
  • Place sauce into a closable container, add noodles. Close container and shake shake shake.
  • Pour into a bowl
  • Sprinkle radish,chicken and arugula on top of the cold noodles
  • Drizzle with sriracha for more heat and sprinkle chives
  • ENJOY!

Chai-Masala Peach paletas!

This recipe is refreshingly creamy and sweet.  It’s a Chai-masala paleta with fresh Georgia peaches.

Paletas- Frozen fruit bars (water or milk base). A popular item sold in the streets of Mexico. Also an amazing part of Mexican culture that has been brought to America!

If you ever visit Nashville, make sure you checkout ‘The Peach Truck’! They truck in fresh Georgia peaches from Pearson Farm in Ft.Valley Georgia. Just imagine, that peachy fragrance and those sweet peach juices dripping down your arm when you take a bite. It is worth it, get to Nashville asap!

Ingredients: Yield- 8 paletas

  • 3 fresh ‘The Peach Truck’ peaches or ripe ones available in your area
  • 2 1/2 cups of plain greek yogurt
  • 4 Tablespoons of honey (can be adjusted to taste)
  • 1 Tablespoon of vanilla extract
  • 1 packet of chai-masala powder
  • Popsicle mold
  • Pinch of salt

Procedure:

  • Pre-heat oven to 350 degrees
  • Cut each peach in half and then into slices
  • Place on a sheet pan, drizzle with 1 tablespoon of honey and sprinkle with a pinch of salt
  • Roast peaches for 35 mins or until peaches are soft
  • Let cool (refrigeration helps the process)
  • Add yogurt, honey,vanilla extract and chai-masala powder to a large bowl
  • Stir thoroughly
  • After peaches are cool, gently fold into the yogurt mixture
  • Pour into popsicle molds
  • Freeze for 4-6 hrs
  • Enjoy!

Crusty white country bread!

Who doesn’t love classic country white bread? All this bread needs is time. After it’s done, it is nice and crunchy on the outside and soft and fluffy on the inside. Time for toastttttttttt. And tasty winter sandwiches!

Yield: 3-4 loaves

Ingredients:

  • 3 cups lukewarm water
  • 6 1/2 to 7 1/2 cups of All purpose flour
  • 1 Tablespoon of salt
  • 1 1/2 instant of active dry yeast

Procedure:

  • The best way to measure this is to weigh it. 32 oz.
  • If not pour the flour into the cup to equal 6 1/2 cups, sweeping the excess off of the top
  • Add all ingredients to a large bowl or into a mixing bowl attached to a kitchen aid
  • Add the water, it should be ‘bath tub warm’ not ‘ouch my hand hot’
  • Trust your instincts
  • Mix everything together gently , to form a sticky dough
  • If you are using a stand mixer, beat on medium speed for 30-60 seconds
  • Now its time for your dough to rise
  • Add the dough to a large plastic bowl and cover with plastic wrap or a kitchen towel
  • Let the dough rise for 2 hrs, room temp
  • Then refrigerate for 2 hrs
  • The longer the better
  • Pre-heat oven to 450 degrees
  • Sprinkle flour with dough and grab a chunk of dough (softball size)
  • Plop it onto a floured surface and shape into a ball
  • This is rustic crunchy bread so don’t fuss over the shape
  • Place bread on parchment thats on a baking sheet
  • Sit flour over the shaped bread
  • Let the dough rise for one more hour, 30 minutes if you are pressed for time
  • Place a shallow metal pan on the bottom rack of the oven
  • Have 1 cup of hot water ready
  • Slash bread 3 times , about 1/2 inch deep
  • Place the pan of bread on the top rack
  • Pour hot water into the pan on the bottom rack and close the oven door
  • Bake for 25-35 minutes until beautiful and golden brown
  • Keep left over dough in refrigerator

I know it’s a lot of steps but it is so worth it! Fresh warm bread, whats better?!

 

Honey-Peanut Butter cookies with sea salt

These cookies are a perfect mix of honey and peanut butter! They are easy to make and melt in your mouth. Also the quote, an ode to food. You are always on my mind!

Yield – 36 cookies

Ingredients:

  • 1/2 cup of shortening or lard
  • 1 cup of creamy or crunchy peanut butter
  • 1 cup of honey
  • 2 eggs lightly beaten
  • 3 cups of all-purpose flour
  • 1 cup of sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 Tablespoon of sea salt for sprinkling

Procedure:

  • Pre-heat the oven to 350 degrees
  • In a bowl mix together the shortening/peanut butter , honey and eggs. Mix well
  • In a separate bowl combine flour, sugar,baking powder and salt
  • Add dry mixture to the peanut butter mixture , mix until well combined
  • Roll into 1-1 1/2 inch balls
  • Place on a baking sheet with parchment paper
  • Flatten with a fork in a criss cross design
  • Sprinkle with sea salt
  • Bake for 8-10 minutes until golden brown
  • Let cool
  • Enjoy with some hot chocolate!

Garlic chicken stuffed sweet potatoes

Stuck inside because of the snowstorm?! Prepare these stuffed sweet potatoes for a warm, quick and healthy dinner!

Ingredients:

  • 2-4 sweet potatoes
  • 2 chicken breasts
  • 1 fig (they come in a pack, perfect for snacking)
  • Package of chives (You’ll only need a few for this dish)
  • Salt and pepper
  • Garlic powder
  • Olive oil

For the sauce:

  • 2 Tablespoons of Sriracha
  • 2 oz of water
  • 6 oz of evaporated milk
  • 3 Tablespoons of peanut butter
  • Salt and pepper to taste

Procedure:

For the sauce:

  • Place all sauce ingredients in a sauce pot
  • Set stove top to low heat
  • Whisk until silky smooth
  • Add salt and pepper to your liking

For the sweet potatoes and chicken:

  • Set castiron pan to medium high heat
  • mince 2 figs
  • chop chives for garnish
  • Slice chicken breasts into strips
  • Season chicken breasts with S & P and garlic powder (Set aside)
  • Poke holes into the sweet potatoes with a fork
  • Place in the microwave 8-10 minutes until fluffy and soft
  • Saute chicken until cooked through and tender
  • Chop chicken into bite size pieces
  • Slice sweet potatoes , fluff the inside with a fork
  • Top with chicken , chopped fig and garnish with chives
  • Drizzle sauce over the sweet potatoes

Serve and enjoy this cozy meal with friends and family!
