This is when we are supposed to get healthy right? Right before the holidays begin? Ok great , that was my plan. Here is an easy as pie recipe, so at the holidays you can eat all of the pie that you want!


  • 1/2 cup of chopped mango
  • 1/2 cup of chopped pineapple
  • A handful of rasberries
  • 1/2 of a banana
  • 4 Tablespoons of peanut butter
  • 2 Tablespoons of chia seeds
  • 1 Tsp of cinnamon
  • Add water as needed for smoothness


  • Chop mango and pineapple
  • Slice banana into coin sized pieces
  • Add all ingredients to a blender (Vitamix, nutribullet, cuisinart,ninja)
  • Blend until medium a thickness and smoothness consistency occur
  • Pour into a bowl
  • Top with bananas, chia seeds and raspberries
  • Also tasty with a drizzle of honey!

Peach and cinnamon scones!

These are peach & cinnamon scones, they are crumbly and lightly sweetened with fresh peaches and cinnamon!  Amazing with coffee or tea!


-2 cups of flour
-1/4 cup brown sugar
-1 Tbsp baking powder
-1/2 tsp salt

-1/2 Tbsp of cinnamon
-1/2 cup unsalted butter, cubed and cold
-1 egg
-1/4 cup heavy whipping cream, plus more for brushing
-1/4 cup sour cream
-2 tsp vanilla extract
-1 cup fresh peaches, diced


-Pre-heat oven to 400 degrees, cover sheet pan with a piece of parchment paper.

-In a large bowl, combine the flour, brown sugar, baking powder,salt & cinnamon.

-Once mixed together, cut in pieces of butter with a fork until the mixture has a crumb like texture.

-Next, combine the wet ingredients in a separate bowl.

-The egg,whipping cream,sour cream and vanilla extract.

-Slowly add wet ingredients into the dry ones until combined.

-Gently stir in the diced peaches.

-Place dough onto a floured surface

-Pat dough into a disk like shape, about 1/2 inch thick

-Cut into 6-8 slices and place on parchment paper

-Brush each scone with heavy cream

-Bake for 16-18 minutes until golden brown. Allow to cool.

-Enjoy this crumbly goodness!

Cardamom Peach cornbread muffins! With pepper jelly!

Yield: 12 muffins


– Cooking spray or muffin tins

– 1 large egg or 2 small ones

– 2 cups self-rising white cornmeal mix- I used ‘White Lily’ for this recipe

– 1 1/4 cups of milk or buttermilk

– 1/4 cup of vegetable oil or olive oil

– 4 tablespoons of sugar

– 2 fresh peaches

– 1 tablespoon of ground cardamom

– Jar of pepper jelly, can be found at the grocery store, mine is homemade from my Uncle Mike!


– Pre-heat oven to 425 degrees

– Chop peaches to medium sized pieces

– Beat the egg in a large bowl, whisk in cornmeal mix ,milk, oil, sugar and cardamom.

– Whisk in chopped fresh peaches

– Batter should be a bit lumpy

– Spray muffin pan

– Fill each muffin cup, 2/3 of the way full

– Bake 18-20 minutes or until a toothpick inserted into the muffin comes out clean.

– Cool for 5 minutes

– Slather with butter or pepper jelly!

– Eat up! Great for breakfast or a summer picnic or cookout!

Sourdough French toast with blackberries!

Ingredients: Yield- 1 slice of sourdough french toast

-1 cup of milk

– 2 eggs

– Tsp of vanilla

– Tsp of cinnamon

– Pinch of salt

– Slice of sourdough bread or regular sandwich bread

– Handful of blackberries

– Maple syrup or honey


-Whisk together the eggs, milk,cinnamon,salt and vanilla.

– Dredge the bread in the mixture, slightly press down on the bread so it soaks up the mixture. Flip and press again.

-Heat pan to medium, spray cooking spray into the pan

-Place bread in the pan, cook for about 2-3 minutes on each side.

– Place on a plate, smother in syrup and blackberries!

– Enjoy for a tasty weekend breakfast, lunch or dinner!
